ALMOND
Rare / Traditional graftingSicilian Almond
Palma Girgenti — a super-rare variety from a limited area in southwest Sicily, with roots reaching back to Roman times. The almond that high-end patissiers and luxury stores hunt for. A true "nut luxury".

About 80% of the world's almonds are mass-produced by grafting almond onto peach trees for efficiency, grown across vast fields with heavy irrigation.
Our Palma Girgenti is the opposite: traditional almond-tree-onto-almond-tree grafting, drawing out the pure, dense flavor and aroma of the variety itself.
Grown in Sicily's harsh climate — intense summer sun, well-draining limestone soil — the almonds concentrate flavor intensely to survive.

Pistachio's birthplace is Iran — and the country's most celebrated growing area is Rafsanjan. Known the world over as "green jewels", these are pistachios in their original, highest form.
A flavor only the origin region can produce.
Roughly 70–80% of pistachios sold online and in Japanese supermarkets come from California — bred for yield and scale.
Lav fabec roasters' pistachios come from Rafsanjan, Iran — the sacred heartland where pistachios have grown for thousands of years. The dry land and sharp day-night temperature swings produce deep green color and concentrated aroma.

Most hazelnuts in Japan are mass-produced Turkish hazelnuts — roasted months ago in overseas factories and oxidized by the time they arrive.
Ours is something completely different. Top-grade Italian Sicilian hazelnuts, beloved as food and medicine since ancient Greek myth — the "forbidden fruit" of legend.
They carry overwhelmingly strong flavor compared to ordinary hazelnuts — a noble aroma and a uniquely refined sweetness that grow with each bite.

PECAN

Pecan is a hickory-family nut native to North America. The United States produces nearly all of the world's supply, with Georgia, Texas, and Oklahoma as the three major regions. Georgia is so prolific it is nicknamed "the Pecan State."
Buttery and rich — unmatched oil content among nuts.
Pecan has the highest oil content among common nuts (around 70%), giving a rich, buttery aroma on the first bite. Pastry chefs and high-end restaurants the world over rely on it.
But high oil means fast oxidation. Pecans roasted half a year ago in overseas factories have lost most of their original character by the time they reach Japan.

CASHEW
World's top-tier originIndian Cashew
India and Vietnam are the two great cashew origins. Indian cashew, in particular, is rated the world's finest for soft texture, deep richness, and natural sweetness. High-end chocolatiers and patissiers around the world specifically choose Indian.
W grade reveals a cashew's true value.
Cashews are strictly graded by kernel size. W180 is the largest top grade, W210 and W240 are premium, while W320 and W400 are the bulk of mass-market supply. The "W" stands for "white wholes".
Large-kernel Indian cashews offer soft texture and a deep sweetness and richness that grows with each bite. Larger kernels carry more depth and a richer mouthfeel.
Mass-market cheap cashews are mixed sizes with many broken pieces, typically Vietnam-Africa blends. Lav fabec roasters selects evenly graded Indian lots, drawing out fresh-roasted sweetness through roast-to-order.
